Another weekend, more of the same – knitting and granita.
I made another batch of the mango granita
This time, I remembered to take a picture (well, actually, Josh took the picture.)
The original recipe is here – but this time I made some changes. The mangoes were very sweet, so I upped the lime juice to 1/2 a cup and only used 1 tbsp of sugar. The lime was the perfect balance for the mangoes. I also made some coconut whipped cream to top it with. I didn’t measure anything, but I think it was 1/2 c of extra heavy whipped cream, 4 tbsp of coconut milk and a touch of honey. The coconut was such a good match – it really reminded us of Thailand.
