A new fun food this week!
Marion has been getting way more interested in self feeding and as a result, we’re trying to find everything we can to let her feed herself.
I started with the recipe over at Wholesome Baby Food but then got irritated when they didn’t specify whether to use the cereal powder or already made up cereal.
So then I went to the ever trusty Martha and pretty much changed or eliminated her ingredients to look like the recipe from WBF.
Ahhh, the mind works in mysterious ways my friend. What I ended up with looks like this:
1 cup all-purpose flour (or wheat if you wish)
1 cup oatmeal cereal powder
2 teaspoons baking powder
1 teaspoon baking soda
(the WBF recipe leaves both of those out, but I think without them, you’d end up with the worlds flatest, densest pancakes, so I left them in.)
3 egg yolks
(I’ve made this recipe twice now and the first time, I used 3 egg yolks, the second time, I used a whole egg and 2 yolks because I forgot to separate them…anyway. Didn’t seem to make too much of a difference either way)
3 cups of formula, breastmilk or milk.
I also used a mashed banana once but it went super rubbery upon reheating, so now I just leave it out and top the pancake with fruit if I want to change it up.
I use a little six inch cast iron skillet to cook them in and layer them with parchment paper when they’re cook and freeze. She loves them and I love the fact that I can actually eat my own breakfast now without her demanding pieces of my waffles.
