So I don’t usually post pictures of food and recipes as there are a hundred million blogs that can do a better job of it than me, but I had a picture of something I made and my friend Katy wanted the recipe and since the blog has been woefully short on content lately, an instant blog post.
Sweet Potato Bars – based loosely on the recipe for Pumpkin Chocolate Chip Granola Bars
Just so you know, these taste mostly like baked oatmeal and not really at all like sweet potatoes. Marion doesn’t really eat them but Eliza gobbles them up.
3 cups raw oatmeal
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon salt
3/4 cup brown sugar
1/2 cup sweet potato puree – I peeled and chunked my sweet potatoes, boiled them, then threw them in the food processor. The canned stuff will work too. Just don’t get pie filling that’s already sweetened!
1/2 cup applesauce – I used homemade applesauce, not because I’m Martha Stewart but because we were out of the jarred stuff and Josh was out with the car. My applesauce was a little watery so if you get done and it seems too dry, you might want to add a bit of more.
1/4 cup honey
1 teaspoon vanilla extract
Raisins. No idea how many I added – just used what was left in our container 🙂
No lying, I would have totally added chocolate chips instead of raisins, but we were out.
Mix dry. Mix wet. Mix both together. Press into a pan (since apparently all our rectangle and square pans were packed into storage, I used a 9 inch cake pan. Worked fine.) Bake at 350 for 30-35 minutes. Don’t let it get too brown around the edges because it gets really crunchy. Unless you want to make granola out of it – then let it get pretty brown and smash it pieces after baking.
